酒店典型事件性餐饮浪费及其影响因素分析——以长沙市酒店婚宴市场为例Study on Typical Event Food and Beverage Waste in Hotels and Analysis of Influencing Factors:Take Changsha City Hotel Wedding Market as an Example

摘要(Abstract):
酒店事件性餐饮浪费已经成为一个突出的问题,其中婚宴餐饮的浪费现象尤为严重。通过对已有餐饮浪费研究进行梳理,并采用消费者自我评估的方式来进行问卷调查,利用网络爬虫技术了解长沙市星级酒店总体价格水平,最后根据现有数据探索影响婚宴浪费的潜在驱动因素。研究发现,长沙星级酒店婚宴市场价格跨度大并呈现出“头大尾小”的特征,浪费现象严重,宴会宾客、宴会主人以及舆论宣传是造成浪费的三大主体,其中舆论宣传在控制社会餐饮浪费方面发挥着越来越重要的作用。受教育程度、婚姻状况、接受节约宣传频率等与自我评估的婚宴浪费量存在显著影响,说明宣传以及责任感的培养对减少婚宴食物浪费至关重要。
